Encha Organic Matcha-Directly from the Farm in Japan Encha
Founder, Dr. Li Gong (Stanford, Ph.D., 2001), discovered our organic matcha
farm in his research of organic green tea farms in Japan. Our farmer in Japan
switched to organic farming in 1987 and has 32 years of experience farming the
best matcha organically. We priced it modestly, by minimizing our cost and
directly bringing matcha from the farm. Ceremonial-Grade Encha Organic Matcha
Ceremonial matcha traditionally means that tea masters use their best matcha
powder for the tea ceremony. Thus, ceremonial matcha should be the highest
grade in a matcha collection and will differ across matcha brands. Culinary
grade is from second or later harvests with much cheaper cost. In the first
harvest of each spring, our farmer selects the most tender, premium quality
matcha green tea leaves, and grinds them as our ceremonial matcha green tea
powder. It has a purely green color and the smoothest and richest taste to be
considered ceremonial grade matcha. Taste: Organic vs. Conventional A well-
whisked bowl of ceremonial Encha matcha tea starts with a smooth, clean and
refreshingly-grassy taste, follows with a frothy and full-bodied texture, and
finishes with a subtle sweet vegetal taste. If you have a sweet tooth, you
might not like the grassy note in pure organic matcha with just water. Try
matcha as latte. Conventional non-organic matcha uses synthetic chemical
fertilizers to make its taste sweeter. Synthetic fertilizers are prohibited by
the USDA organic standards. Compared to non-organic matcha of the same grade,
organic matcha tends to taste grassier. Delicately grassy is the expected
taste for high-quality ceremonial organic matcha such as Encha. Benefits and
Content of Encha Ceremonial Matcha The recommended serving size of Encha is
one level teaspoon, about 2 grams of matcha powder. Adjust it to suit your
needs. One serving of Encha matcha powder contains ~240 mg of antioxidant
catechins (including 120 mg of EGCG), ~60 mg of caffeine, ~24 mg of theanine
and only 8 calories. Encha Organic Matcha Plants Shaded for about 3 Weeks
before Harvest One unique farming technique for Encha Organic Matcha is to
shade the green tea plants for about 3 weeks before harvest. It is shading
that makes the plant grown more mentally calming theanine. It is the unique
combination of mentally calming theanine + moderate caffeine in Encha that
helps create the experience of calm energy without jitter and longer mental
focus without crash. About 12% of the content in Encha Organic Matcha powder
is the powerful antioxidant Catechins. That is a very high amount in a natural
plant product. Its antioxidant properties might help prevent diseases, slow
aging, reduce UV damage and acne, improve skin smoothness, stimulate
metabolism, and enhance overall immunity. Not all matcha plants, even in
Japan, are grown with the same soil quality, shading or organic farming
techniques. Encha Organic Matcha Leaves Ground into Fine Powder after Removal
of Stems Another unique technique in making Encha Organic Matcha is to remove
the stems of the leaves before grinding. Traditionally, workers painstakingly
removed the stems by hand. Nowadays, it is much easier, making pure organic
matcha affordable. First, the fresh leaves are steamed dry on the day of
harvest to prevent oxidation. Then, leaves are cut into smaller pieces and
blown by air onto a two-deck conveyor belt. Lighter pure leaves are blown onto
the upper deck. The heavier stems settle to the lower deck. Afterwards, we
manually pick out any remaining stems from the pure leaves. Finally, we grind
the pure leaves into super-fine Encha organic matcha powder. Encha Farmer and
Founder carefully evaluate all high-quality leaves from each harvest. The most
tender leaves of each spring are used for Ceremonial-grade Encha. The standard
high-quality leaves of each spring are used for Latte-grade Encha. The best
leaves of the 2nd harvest (late June) are used for Culinary-grade Encha. Make
